Chocolate Peanut Butter Protein Brownies Recipe

Who doesn't love a good brownie? Let's take the classic brownie, make it healthier and pack it full of protein so you can indulge any day. We're using Legacy's FRESH Choc-A-Lot PB whey protein to make these traditional brownies with a peanut butter twist.

Ingredients:

  • 1 cup (120g) oat flour
  • 1/2 cup (40g) cocoa powder
  • 1 scoop (40g) Legacy FRESH Choc-A-Lot protein powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (120ml) pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peanut butter
  • 1 teaspoon coconut oil or olive oil
  • Optional: 1 cup chocolate chips

Instructions:

  1. Preheat your oven to 350F (175C). Grease an 8x8 inch square baking pan with butter or cooking spray.
  2. In a medium-sized mixing bowl, combine the oat flour, cocoa powder, protein powder, baking powder, and salt. Stir until well combined.
  3. In a separate mixing bowl, beat the butter, oil, maple syrup, eggs, peanut butter and vanilla extract together until smooth.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and spread it out evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of the brownies comes out clean.
  7. Remove the brownies from the oven and let them cool for at least 10 minutes before slicing and serving.

We’re using maple syrup in this recipe instead of sugar which will make the batter thicker. Maple syrup is a natural sweetener and contains minerals like manganese, zinc, and some antioxidants. This recipe can also use other natural sweeteners like honey, coconut sugar, or dates puree. It's recommendable to experiment with different sweeteners and find the one you enjoy most and suits your dietary needs.
