Cinnamon Bun Protein Muffins Recipe

Ingredients:

  • 1 ½ cups whole wheat flour
  • 1 scoop of Legacy's FRESH Cinnamon Bun protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup Greek yogurt (plain or vanilla)
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened applesauce
  • ½ cup almond milk (or any milk of your choice)
  • Optional: ¼ cup chopped nuts or seeds for extra crunch

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, protein powder, baking powder, baking soda, salt, and ground cinnamon.

  3. Combine Wet Ingredients: In another bowl, beat the Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until well combined. Stir in the applesauce and almond milk.

  4. Mix Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

  5. Fold in Berries: If using, mix in the chopped nuts or seeds.

  6. Fill Muffin Tins: Divide the batter evenly among the muffin cups, filling each about ¾ full.

  7. Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  8. Cool and Enjoy: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
